Summary of this tutorial:

Start by going under Posts, Categories and click edit under Uncategorized when you hover over it.

This will bring you to the edit page where you can change the name to your desired name as well as the slug for the category.

If you use this method, you will need to do a 301 redirect should you have posts active and viewable on your site.

The second method would be to create your category that you would like to be the new default.

Once created, go to Settings, Writing and on that page you will be able to change the default post category to the one you want.
